STUDY OF INFLUENCE OF HIGH MOLECULAR WEIGHT (HMW) AND LOW MOLECULAR WEIGHT (LMW) GLUTENIN SUBUNITS ON ITALIAN, IRANIAN AND CANADIAN DURUM WHEAT QUALITY

HMW, LMW, durum wheat, quality

 

The research was carried out with the aim to study the effects of LMW and HMW  glutenin subunits composition on gluten strenght. Some durum wheat varieties from Italy (Mongibello, Nedda, Linea-25, Amedeo, Bronte and CT-298), Iran (IRN 1, IRN 3, IRN 4, IRN 5 and IRN 6), Canada (Pathfinder, Navigator, Avonlea, Wascana, Melita and Kyle), were analyzed for high molecular weight (HMW) and low molecular weight (LMW) glutenin composition by electrophoresis. Semolina samples were analyzed for protein, wet and dry gluten content, gluten index, SDS sedimentation volume and alveograph parameters. The differences between the pairs of alleles were tested using t-test. The results showed that the analyzed varieties were different for HMW (7+8, 20, and 6+8). Two genotypes (Kyle and Melita) showed a different composition at B LMW. Concerning C LMW glutenin subunits in twelve varieties a band was identified that probably is in relation with W values. HMW glutenin subunits 7+8 gave larger W values than subunits 20 and an higher gluten index than subunits 20 and 6+8. No differences were releaved between 6+8 and 20 HMW glutenin subunits for gluten strenght. The alveographic parameter W was significantly correlated with SDS sedimentation volume and gluten index, whereas protein content shows some influence on grain colour.
